{"id":904,"date":"2024-01-01T20:51:21","date_gmt":"2024-01-01T19:51:21","guid":{"rendered":"https:\/\/emilioyascension.com\/cookbook1\/?p=904"},"modified":"2024-01-03T08:27:09","modified_gmt":"2024-01-03T07:27:09","slug":"albondigas-de-berenjena","status":"publish","type":"post","link":"https:\/\/emilioyascension.com\/cookbook1\/albondigas-de-berenjena\/","title":{"rendered":"Alb\u00f3ndigas de berenjena"},"content":{"rendered":"\n<h4 class=\"wp-block-heading\">INGREDIENTES<\/h4>\n\n\n\n<p class=\"wp-block-paragraph\">Para las alb\u00f3ndigas:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>500 gr de berenjena<\/li>\n\n\n\n<li>50 gr de tomate seco ali\u00f1ado de hierbas<\/li>\n\n\n\n<li>100 gr de pan rallado<\/li>\n\n\n\n<li>2 dientes de ajo<\/li>\n\n\n\n<li>10 gr de albahaca<\/li>\n\n\n\n<li>150 gr de harina<\/li>\n\n\n\n<li>300 ml de aceite de oliva<\/li>\n\n\n\n<li>Para la salsa de alb\u00f3ndigas:<\/li>\n\n\n\n<li>1 Cebolla<\/li>\n\n\n\n<li>1 Pimiento verde<\/li>\n\n\n\n<li>1 Puerro<\/li>\n\n\n\n<li>1 Zanahoria<\/li>\n\n\n\n<li>120 ml de vino blanco<\/li>\n\n\n\n<li>2 dientes de ajo<\/li>\n\n\n\n<li>100 ml de caldo de verduras<\/li>\n\n\n\n<li>200 ml de salsa de tomate<\/li>\n\n\n\n<li>1 Rama de tomillo<\/li>\n\n\n\n<li>Sal<\/li>\n\n\n\n<li>Or\u00e9gano fresco<\/li>\n\n\n\n<li>Aceite de oliva virgen extra<\/li>\n\n\n\n<li>Pimienta negra<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\">PREPARACI\u00d3N<\/h4>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Para las alb\u00f3ndigas:<\/li>\n\n\n\n<li>Precalentamos el horno a 200\u00baC con calor superior e inferior con ventilador.<\/li>\n\n\n\n<li>Cortamos la berenjena a la mitad y hacemos incisiones alargadas en la pulpa de la berenjena.<\/li>\n\n\n\n<li>Asamos la berenjena 20 minutos con un poco de sal, pimienta y aceite de oliva.<\/li>\n\n\n\n<li>Trituramos en la picadora albahaca, ajo y el tomate seco. Trituramos la pulpa de la berenjena junto al ajo, el tomate y la albahaca.<\/li>\n\n\n\n<li>Mezclamos la pasta de berenjena con el pan rallado y ponemos a punto de sal. Boleamos con el tama\u00f1o deseado. Enharinamos y fre\u00edmos en aceite caliente. Reservamos hasta que la salsa este hecha .<\/li>\n\n\n\n<li>Para la salsa de las alb\u00f3ndigas:<\/li>\n\n\n\n<li>Cortamos la cebolla, el ajo, el pimiento, el puerro y las zanahorias en trozos muy peque\u00f1os Rehogamos el ajo con un poco de romero. A\u00f1adimos la cebolla y el puerro. Sofre\u00edmos 2 minutos.<\/li>\n\n\n\n<li>A\u00f1adimos el pimiento y el vino blanco. Dejamos que evapore el alcohol. A\u00f1adimos la zanahoria y dejamos que cocine unos minutos. A\u00f1adimos el tomate frito y el or\u00e9gano. A\u00f1adimos el dejamos cocinar 20 minutos. A\u00f1adimos las alb\u00f3ndigas y les damos un golpe de calor antes de servir.
